Ingredients

5 cups cherry tomatoes cut in half, or used diced Roma tomatoes
2 tbsps olive oil
1 tbsp dried basil
1 tbsp oregano dried Turkish, Greek, or Italian
1 tbsp fennel seeds ground
1 cup tomato sauce plain, canned sauce is fine
1/4 cup water
1 tbsp minced garlic finely, or garlic puree
salt 1/2 tsp.
2 1/2 fresh basil 2-3 t chopped, and oregano would be great added to the sauce
2 eggs
3 1/2 cups low-fat mozzarella cheese grated, I used a 16 oz. package, which was not quite 4 cups
11 noodles 10-12 dried lasgna
olive oil spray for spraying lasagna dish
