Ingredients

3 tbsps olive oil
1 1/2 lbs beef roast boneless, trimmed and cubed into 1/2 to 1 inch pieces
2 purple onion large, chopped
1 shallots chopped
1 garlic cloves chopped
1 tbsp tomato paste
4 cups beef broth
15 ozs stout Guinness
1/2 tsp black pepper
1 1/2 cups sliced carrots quartered &, about 3-4 large carrots
1 turnips medium sized, chopped about the same size as the sliced carrots, about 1 cup
1 rutabaga medium sized, chopped about the same size as the sliced carrots, about 1/2-3/4 cup
2 parsnips sliced about the same size as the sliced carrots, about 1 cup
6 red potato quartered and sliced into 1 inch pieces, about 2 cups
2 tsps corn starch or other thickener, flour, arrowroot, etc. But can be omitted for a Paleo version
1 tbsp dried parsley chopped, or 2 Tablespoons fresh parsley
